The Basic Taco Tuesday Recipe

  • Ingredients

    • 1.5# grassfed ground beef (1/3 – 1/2# per person)

    • Organic Taco Seasoning Packet or Pouch (like Simply Organic) [Autoimmune – try this recipe]

    • Organic Spinach, Lettuce, or Cabbage

    • Organic salsa of choice

    • Organic Extra Virgin Coconut Oil

    • (optional) Organic pre-cut fajita mix, including peppers & onions

    • (optional) Pre-made guacamole

    • (optional) Organic, non-GMO corn tortillas or brown rice tortillas

    • (optional) Raw gouda or cheddar, shredded

  • Instructions

    1. If using, sauté onions & peppers over medium-low heat for 8 minutes in 2 Tbsp. coconut oil. Season with salt, pepper, & garlic powder. As soon as this is going, move on to step 2.

    2. Over medium heat, brown the ground beef. If using grassfed ground beef, do not drain. Push the ground beef to the edges so that there is a pool of liquid in the center and empty the seasoning packet into the pool. Stir.

    3. Reduce heat to low, mix seasoning in well. Simmer for 5 minutes, until thick, stirring occasionally.

    4. Shred the lettuce or serve as is to make a taco salad instead of using tortillas if you are sensitive to corn. 4. If using, shred the raw cheese of choice.

    5. If using, heat the tortillas, 1-2 per person, for 30 seconds in a skillet or toaster oven to soften. Put the finished tortillas on a plate covered with a towel until dinner.

    6. Serve family style on the table so everyone can make their own favorite combination!

  • Ideas:

    • Rotate through beef, lamb, fish, and turkey tacos. Swap out with steak, chicken, and shrimp fajitas. The possibilities are endless!

    • Whatever greens are in the fridge will work. Sometimes, I steam or sauté shredded cabbage if I don’t have any lettuce.

    • Can also serve with black beans, chickpeas, lentils, or quinoa

  • Ingredients

    • 1.5# grassfed ground beef (1/3 – 1/2# per person)

    • Organic Taco Seasoning Packet or Pouch (like Simply Organic)

    • Organic bell peppers, 1 of each color

    • 1-2 onions, sliced

    • 4 cloves garlic, peeled and smashed

    • Salt & Pepper

    • Organic Spinach, Lettuce, or Cabbage

    • Organic salsa of choice

    • Organic Extra Virgin Coconut Oil

    • (optional) Guacamole using this recipe

    • (optional) Organic, non-GMO corn tortillas or brown rice tortillas

    • (optional) Raw gouda or cheddar, shredded

  • Instructions

    Using fresh ingredients, slice the bell peppers and onions lengthwise.

    Smash & chop the garlic. When peppers & onions are halfway finished (~4 min.) add the garlic.

    (Tip: Save onion tops and skins and carrot ends for extra flavor in broth. For now, stick ’em in a bag & freeze ’em. We’ll get to that later!)
