Cooking is really about a few simple ingredients with add-ons to create different flavors and effects. In today's video, I share how to make basic grain-free pancakes that are fluffy, yummy, and easy to do.
Then, I spice it up to make Gingerbread Pancakes. YUM! :) This was so much fun!
Here's the recipe I used (which I doubled and modified from the original from Southbeach Primal found here:

- 1 cup almond meal
- 4 Tbsp. coconut flour
- 2 pinches of salt! (~1/4 tsp)
- 1/2 tsp. baking soda
- Gingerbread spices: 1 tsp. cloves, 1 Tbsp. ginger, 1 Tbsp. nutmeg, 1 Tbsp. cinnamon
- 6 eggs
- 2-3 Tbsp. honey (optional)
- 2 tsp. vanilla
- coconut oil (for the pan)
Whisk dry and wet ingredients separately (watch the video for the KEY step to fluffiness!). Heat a Tbsp. of coconut oil in a skillet over medium low heat. Pour in a bit of batter, wait for edges to bubble and a few bubbles in the middle before flipping. Cook 1-3 min. on each side. Can top with grassfed butter, fruit, homemade whipped cream, and/or a bit of maple syrup! Enjoy!
