Tasty Tuesday: Salmon Avocado Salad!

In this edition of Tasty Tuesday is another one of Emperatríz’s yummy, simple recipes! Emperatríz is a friend and former member of The Fitnitiative, one of my Vitality Renewal Programs. Over 12 weeks, she lost 12 pounds and 4 inches in addition to some amazing health benefits! I love how simple and delicious her recipes are. 🙂

AVOCADOS!!

Ingredients:

2 avocados

200 gr. Salmon (chopped or can)

2 tablespoon red onion (chopped)

2 tbs. parsley (chopped)

Limon juice

Salt and pepper

For serving: Lettuce leaves, 4 boiled eggs

Preparation:

  • Mix in a bowl all ingredients except the avocado
  • Cut the avocado in two parts, peel off the layer.
  • Then, fill with the mix
  • Serve with lettuce and boiled eggs
