Happy 4th of July holiday! A most fantastic time of year when blueberries are in full swing, the heat index is through the roof and lots of barbeque waiting to enter my mouth!

Clint and I just returned from a quick trip to South Carolina to visit Clint’s family. Wish we could have stayed longer but here are a couple of photos from three delicious meals:

You can’t go wrong with delicious food like that! I’m so excited they have gotten on board with organic farming and pastured beef! đŸ™‚ Warms my heart AND makes my belly happy! One of the most difficult things about traveling or eating out is knowing in advance about the intestinal difficulties I WILL face. This is frustrating for some because it limits choices or presents itself in ways that were seemingly fine “before”. I just deal with it because I know that what I feed myself at home is energizing, life-giving and transformative in its benefits. Of course inflammatory foods like vegetable oils, hydrogenation, possibly grains & legumes (like corn and beans) will not settle well with our new bodies because our now-healthy intestines are more sensitive to what we feed ourselves.

Before, our intestinal lining and make-up was damaged because of inflammatory foods that either damage or wipe out the lining that absorbs nutrients,  destroy the “good” bacteria, and/or punch holes through the lining to get out into the blood. Now, our happy intestines are full of “good” bacteria, our lining is intact and excited to absorb nutrients, and the holes are repaired. In my opinion, this is why some foods we used to eat affect us in a different way if we eat them now.

But it was comforting to know I did not have to worry about those issues on this recent trip! Instead, I filled my belly with fresh tomatoes, green beans, corn (my cheat), pastured eggs, chicken & pork, onions, etc.!

Plus, I tried out this delicious recipe from Living Without that Laura sent me (thanks Laura! Delicious!). I’ve simplified and adapted it for your pleasure.

Gluten-Free Graham Crackers

  • 2 1/4 cups almond meal
  • 1/2 cup brown sugar
  • 1/2 tsp. salt
  • 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 2-3 Tbsp. cinnamon
  • 1 stick butter, slicked into pats (best if allowed to soften first)
  • 3 Tbsp. honey (optional)
  • 2-3 Tbsp. water (optional), only if needed)

Mix dry ingredients well. Mash in butter with your hands until thoroughly mixed. Stir in honey if desired. If too clumpy, add water 1 Tbsp. at a time (I did not need any water at all) until doughy in a ball. Roll into a big ball and let sit in the fridge for one hour OR the freezer 15-30 min. While cooling, cut 2 one gallon freezer bags open on two sides to make two long pieces of plastic OR two pieces of wax paper. Heat oven to 325ºF. Take a ball of dough and put between plastic. May want to put some almond meal on the sheet and on top of the dough to help with the stickiness. Roll until desired thickness. TIP: Thinner is great! Place a piece of parchment paper on a cookie sheet. Carefully remove the top piece of plastic. Cut into squares and poke holes in dough with a fork. Flip second piece of plastic onto cookie sheet OR spatula each piece onto the cookie sheet. Bake for 12-15 min. Watch for edges to get crispy. May cover with piece of aluminum foil and bake an additional 5 min. Remove from oven, allow to cool, ENJOY! đŸ™‚

    • Hi Dene! They are sooooo yummy! đŸ™‚ In Camden, almond meal may be purchased at Better Living Natural Foods on 70 W by Downhome Family Restaurant. When you walk in, it’s on the right in the coolers.

      Otherwise, it may be purchased at some Krogers, at Whole Foods, and online. Let me know how they turn out for you!
