What do you eat for breakfast???

Breakfast is usually the most difficult meal for folks to change when going Paleo. Why? Because they are used to eating crap food like cereal, donuts, and “healthy” granola bars.

Sure these things taste good, but they wreak havoc on your body and set you up for a blood sugar roller coaster throughout the day!

Instead, eat a breakfast of protein and fat to give you lots of energy while preventing insulin spikes and drops! This might look like a leftover burger from the night before, or a pork chop with broccoli. Breakfast should look like the rest of your meals!

Here’s my favorite of late… Scrambled beef and Kale. It’s great because it only takes 5 min. from start to finish and is chock full of yummy vitamins… the fat it’s cooked in allows you to absorb all those fat soluble vitamins!

Recipe:

  • 1/2 – 1 # ground beef (grassfed is best!)
  • 1/2 Tbsp. coconut oil (optional, the beef fat juices are just as delicious!)
  • 2-4 handfuls of chopped kale
  • salt

In a skillet over medium heat, brown ground beef until almost finished. Add kale and saute until dark green and cooked through. Salt as desired. Enjoy!
